Abstract:On the basis of the literature analysis, the evaluation indexes of food cold chain transparency were selected, including human resources, food, equipment and facilities, information and cost. Then, based on the evaluation results of these indexes from the consumer perspective, the rationality, reliability and weight of these indexes were analyzed by using the structural equation model ,and determined the evaluation index system of food cold chain transparency, including information, human resources, food and equipment as well as the four types of evaluation index. Finally, five suggestions are put forward to improve the transparency of food cold chain in order to provide reference for the food enterprises to strengthen the cold chain management and enhance the core competitiveness.
