在文献分析的基础上,初选了食品冷链透明度评价指标,主要包括人力资源、食品、设备与设施、信息以及成本等指标。从消费者视角对这些指标的评价结果的基础上,运用结构方程模型分析了指标的合理性、可靠性以及权重,并最终确定了食品冷链透明度评价指标体系,包括信息、人力资源、食品与设备以及成本等四类评价指标。最后,提出了提高食品冷链透明度的五点建议,旨在为食品企业加强冷链管理、提升核心竞争力提供参考和借鉴。

On the basis of the literature analysis, the evaluation indexes of food cold chain transparency were selected, including human resources, food, equipment and facilities, information and cost. Then, based on the evaluation results of these indexes from the consumer perspective, the rationality, reliability and weight of these indexes were analyzed by using the structural equation model ,and determined the evaluation index system of food cold chain transparency, including information, human resources, food and equipment as well as the four types of evaluation index. Finally, five suggestions are put forward to improve the transparency of food cold chain in order to provide reference for the food enterprises to strengthen the cold chain management and enhance the core competitiveness.
